This “Ember of Hell” is a Chasselas from the Lavaux area along Lake Geneva. In ancient times, the steep vineyards were unstable, resulting in frequent landslides. Often, winegrowers would find their stone walls destroyed in the spring, and thought the devil resided under their vineyards.
Tasting Notes: Expressive bouquet, with notes of flint and grilled almond. Gegenerous, with a lot of character and terroir. Pairing: Serve young (1-3 years), ideal as an aperitif and with fish and white meat; later ideal with cheese.
